The Rich Heritage of Jaggery

The story of jaggery is deeply woven into the historical fabric of the Indian subcontinent. Dating back over 3,000 years, the earliest evidence of boiling sugarcane to extract this nutrient-dense sweetener can be traced to ancient Ayurvedic texts. Known as Guda or Sarkara, it was celebrated not just as a culinary delight, but as “medicinal sugar”—revered for its ability to purify the blood, boost immunity, and aid digestion.

While refined white sugar eventually took over the global market during the colonial era, the traditional art of jaggery making survived and thrived in the heart of India. Today, the finest jaggery is famously produced in the lush, sugarcane-rich belts of Karnataka, Maharashtra, and Uttar Pradesh.
